Co-owner Huston Davis believes muddled cucumber gives this drink a refreshing quality reminiscent of fresh-squeezed lemonade.

1/2 cup diced seedless cucumber, plus 1 cucumber spear for garnish
1/2 ounce Simple Syrup
2 ounces bourbon
1/2 ounce fresh lemon juice
1/2 ounce fresh lime juice
Ice
2 ounces chilled ginger ale

In a cocktail shaker, lightly muddle the diced cucumber with the Simple Syrup. Add the bourbon, lemon juice, lime juice and enough ice to fill a highball glass; shake well. Pour into a highball glass, top with the ginger ale and garnish with the cucumber spear.
