This peach-scented cocktail gets its frothy texture from a shaken egg white.

2 ounces gin, preferably London dry
1 ounce dry vermouth
2 teaspoons peach liqueur
2 teaspoons fresh lemon juice
1 teaspoon orgeat (almond-flavored syrup)
1/2 large egg white
Ice
3 dashes of lemon bitters or 1 lemon twist, for garnish

In a cocktail shaker, combine all of the ingredients except ice and the garnish and shake well. Add ice and shake again. Strain the drink into a chilled coupe and garnish with the bitters.
