Former Waterstreet bar manager Justin Hosford says he made this drink for two reasons. "One, I always try to have a drink that people find slightly strange on my cocktail menu. If anything, it creates conversation. Two, I don't keep a blender behind my bar, so I wanted to create a drink with a naturally smooth texture."

How to Make Aerated Green Apple Sorbet

Ingredients

  • 3 lime wedges
  • 1 thick avocado wedge
  • 1 tablespoon raspberry preserves
  • Ice
  • 1 1/2 ounces reposado tequila
  • 3/4 ounce Cointreau or other triple sec
  • 2 ounces pear nectar
  • 1 ounce fresh grapefruit juice

How to make this recipe

  1. In a cocktail shaker, muddle 2 lime wedges with the avocado wedge and raspberry preserves. Add ice and the tequila, Cointreau, pear nectar and grapefruit juice. Shake well and strain into a chilled martini glass. Garnish with the remaining lime wedge.
