Ingredients

  • Ingredients
    1. 1 pound smoked mozzarella, coarsely chopped
    2. 1/4 cup plus 1 tablespoon extra-virgin olive oil
    3. 3 tablespoons sun-dried tomato pesto
    4. 1 tablespoon chopped parsley
    5. Salt and freshly ground pepper
    6. Flatbread crackers, for serving

Directions

  1. In a food processor, combine the mozzarella, olive oil and pesto and process to a coarse paste. Scrape into a bowl. Stir in the parsley and season with salt and pepper. Serve with flatbread crackers.
