Cheesecake cooked in a slow cooker has an unbelievably silky texture because the machine steams the cake as it bakes. The toughest part about making it is resisting the urge to peek inside the slow cooker—the lid must stay closed to retain heat.

Slow-Cooker Sour Cream Cheesecake

This had a perfect cheesecake texture of smooth and creamy yet light and fluffy.  It also presented well with a perfectly flat crack-free top.  I followed the recipe exactly and the only thing I would change next time is to reduce the almond extract or substitute it with vanilla as it was a bit too strong for my taste.
