Sherry Cocktail

Mexican-born mixologist Junior Merino balances flavors like a chef, creating classically inspired, invariably pretty drinks, such as this sherry-spiked riff on a brandy sour. Like many top mixologists, he’s well-known internationally; he’s currently working on both a cocktail book to be published in Japan and a Mexican Slow Food guide.

Ingredients
- Ice
- 1 ounce palo cortado or amontillado sherry
- 1 ounce brandy, preferably Spanish
- 1/2 ounce grenadine
- 1/4 ounce fresh lemon juice
- 1/4 ounce Cherry Heering or other cherry liqueur
- 1 orange twist
- 1 brandied cherry
Directions
- Fill a cocktail shaker with ice. Add the sherry, brandy, grenadine, lemon juice and Cherry Heering and shake well. Strain into an ice-filled rocks glass. Flame the twist: Holding the twist skin-side-down over the drink, pinch the edges while holding a lit match underneath. Garnish the drink with the flamed twist and the cherry.
