This pairing of chopped lamb with a mashed-potato topping is one of the most beloved British classics. Chef Tom Aikens infuses milk and cream with fresh herbs before folding them into the potatoes to make the dish especially luxurious.

Hearty, sustaining lamb dishes like shepherd’s pie often bring red wine to mind. Red Rhône varieties like Syrah and Grenache from the ’06 vintage on California’s Central Coast have a spicy edge that would impress with this dish. Look for the plummy 2006 Cycles Gladiator Central Coast or the blueberry-inflected 2006 Hocus Pocus Santa Barbara County Syrah.

Shepherd’s Pie

I made this today with a couple of changes. I am single so I only used 1 lb of lamb. I kept the vege amount the same and decreased the spice amounts by half. The milk I made as the recipe called for and just used what I needed to make the mashed potatoes. I substituted a small eggplant since I didn't have a turnip. The dish was delicious!!

Yummo!  This recipe was delicious.  Yes, it had a lot of broth in it but I cooked it down.  I paired it with the Cycles Gladiator, which I found at a grocery store for around $10 (I'm lucky to live in California).  Awesome!  I made 1/2 the recipe and cooked the lamb at least twice as long as the recipe called for and it sure was good.  And the pairing was great.

This came out WAAAAYYYY too runny.  The flavor was great, but A Quart of beef stock seemed to be just far too much.  It came out like Shepherd's Pie Soup.
