Shaved Yellow Squash with Arugula, Goat Cheese and Pecans

Paper-thin yellow squash imitates pasta when sliced lengthwise on a mandoline and tossed in olive oil with arugula and goat cheese. Pecans add wonderful texture.

  • 3 medium yellow squash, sliced lengthwise paper-thin on a mandoline
  • 8 ounces baby arugula
  • 2 ounces toasted pecans
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 2 ounces goat cheese
  • Kosher salt
  • Black pepper

How to make this recipe

  1. In a large mixing bowl, toss the squash with the arugula, pecans, vinegar, oil, salt and black pepper. Top with crumbled goat cheese and serve.
