Seared Tuna with Kimchi and Scallion Pancakes

The lemon-apple flavors and silky texture of Grenache Blanc make it one of the few whites that pair with all three of the elements in this dish—tuna, kimchi and scallions. Originally from northeast Spain, Grenache Blanc is now grown in France and the United States too; look for the lusciously ripe 2004 Clos Dominic Blanc from Spain's Priorato region or the almondy, lush 2004 Tablas Creek Vineyard from California's Central Coast.
