Seared Scallops

- 1 tablespoon extra-virgin olive oil
- 16 sea scallops, trimmed
- Salt and freshly ground pepper
- In a large skillet, heat the oil. Season the scallops with salt and pepper and add to the pan. Cook over high heat, turning once, until cooked through, 5 minutes. Serve hot.
