Sautéed Scallops with Lime

  1. 3 tablespoons olive oil
  2. 1 1/2 pounds sea scallops
  3. 2 tablespoons finely chopped cilantro
  4. 1 garlic clove, minced
  5. 1 teaspoon fresh lime juice
  6. Salt and freshly ground pepper
  7. Crusty bread, for serving
  1. Heat the oil in a large nonstick skillet until almost smoking. Add the scallops and cook over moderately high heat until browned on the bottom, about 2 minutes. Turn the scallops and cook until just opaque throughout, about 2 minutes longer. Add the cilantro, garlic and lime juice, season with salt and pepper and toss to combine. Serve with bread.
