Sautéed Cabbage with Brown Butter and Poppy Seeds

It takes only minutes to make nutty brown butter, but don't let your attention wander during that short period--the butter can go from golden to burnt very quickly. Have your sliced cabbage at hand to add to the skillet at just the right moment.

  • 3 tablespoons unsalted butter
  • 1 pound green cabbage, thinly sliced
  • 1 teaspoon poppy seeds
  • Kosher salt
  • Freshly ground black pepper

How to make this recipe

  1. Cook the butter in a medium heavy skillet over moderate heat, stirring occasionally, until it turns golden and nutty and the flecks on the bottom of the pan turn a rich caramel brown, about 6 minutes.

  2. Add the cabbage and cook, stirring occasionally, until wilted and crisp-tender, 5 to 8 minutes.

  3. Stir in the poppy seeds and season with salt and pepper. Transfer to a bowl and serve immediately.
