Sautéed Cabbage with Brown Butter and Poppy Seeds

It takes only minutes to make nutty brown butter, but don't let your attention wander during that short period—the butter can go from golden to burnt very quickly. Have your sliced cabbage at hand to add to the skillet at just the right moment.

  • 3 tablespoons unsalted butter
  • 1 pound green cabbage, thinly sliced
  • 1 teaspoon poppy seeds
  • Kosher salt
  • Freshly ground black pepper

How to make this recipe

  1. Cook the butter in a medium heavy skillet over moderate heat, stirring occasionally, until it turns golden and nutty and the flecks on the bottom of the pan turn a rich caramel brown, about 6 minutes.

  2. Add the cabbage and cook, stirring occasionally, until wilted and crisp-tender, 5 to 8 minutes.

  3. Stir in the poppy seeds and season with salt and pepper. Transfer to a bowl and serve immediately.
