“This drink is kind of a mash-up of the Pisco Punch, the Mai Tai and the Silver Fizz,” says Erik Adkins. The orgeat and lime come from the Mai Tai, the club soda and egg white from the Silver Fizz.

2 ounces pisco
1 ounce fresh lime juice
1/2 ounce pineapple gum syrup (See Note)
1/2 ounce orgeat (almond-flavored syrup)
1 large egg white
2 ounces chilled club soda
How to Make It
In a cocktail shaker, combine the pisco, lime juice, gum syrup, orgeat and egg white and shake well. Add ice and shake again. Pour 1 ounce of the club soda into a chilled collins glass. Strain the drink into the glass, then stir in the remaining 1 ounce of club soda.
