Salted Fudge Brownies

Kate Krader has been making these fudgy, sweet-salty brownies since she was 10 years old. As a kid she used regular table salt; now she recommends a flaky sea salt like Maldon, because the flavor is less harsh and it melts so nicely into the batter, accentuating the chocolaty sweetness.

Salted Fudge Brownies

I made these the day I saw the recipe and they are delicious. I like another reviewer's suggestion to replace some of the white sugar with (dark) brown, as I think this would add depth of flavor. Also, I would suggest increasing the salt on top to 3/4 tsp---just a bit more. To get the salty appearance in the accompanying photo you'd have to use about a tablespoon! These need at least the full 35 minutes to bake, even if the top looks like it's getting quite done. Mine stayed in about 33 minutes and the center could have used just a few more--quite gooey, but no complaints.
