- 2 pounds mixed chopped mushrooms (such as maitake, stemmed shiitake, oyster and cremini)
- 1/2 cup extra-virgin olive oil
- Kosher salt
- Fresh lemon juice
How to make this recipe
- Preheat the oven to 450°. In a large bowl, toss the mushrooms with the olive oil and season with salt. Spread on 2 large rimmed baking sheets and roast for about 30 minutes, stirring once, until golden.
- Season with fresh lemon juice and serve.
The roasted mushrooms can be refrigerated overnight. Gently reheat before serving.
