Honey, lime, salt and freshly ground pepper, for seasoning
In a large pot, heat the oil. Add the cloves, star anise pods, dried chipotle chiles, rosemary sprigs and ginger, and cook 2 minutes, stirring. Stir in the winter squash and roast at 375° until tender, about 30 minutes. Discard the cloves, anise, chiles and rosemary. Season with honey, lime, salt and pepper.
