Roasted Squash

Top Chef Masters winner Floyd Cardoz finishes his spice-roasted squash with tangy lime and sweet honey.

  1. 1/4 cup oil
  2. 4 cloves
  3. 2 star anise pods
  4. 2 dried chipotle chiles
  5. 2 rosemary sprigs
  6. 1/2 cup chopped fresh ginger
  7. 10 cups 1-inch-cubed peeled winter squash
  8. Honey, lime, salt and freshly ground pepper, for seasoning
  1. In a large pot, heat the oil. Add the cloves, star anise pods, dried chipotle chiles, rosemary sprigs and ginger, and cook 2 minutes, stirring. Stir in the winter squash and roast at 375° until tender, about 30 minutes. Discard the cloves, anise, chiles and rosemary. Season with honey, lime, salt and pepper.
