Good News: Eggplant is a good source of vitamins A and C and is low in calories. It's one of the vegetables Clark Frasier likes to serve during colder months, in hearty dishes such as this soup. "As chefs, we tend to think first of root vegetables, but eggplants are also robust in winter."

Roasted Eggplant and Lentil Soup

I love love love this soup! The only thing I'd add is some onion or garlic to the last few minutes of the lentils or roast some with the eggplant to add a bit more depth to the soup.

Yum!  Even the kids liked it - don't skip the sage leaves - it really makes the dish!
