Mixologist Jackie Patterson created this smooth, rich drink using Jennifer Colliau's artisanal pineapple gum syrup and orgeat. Patterson made a name for herself in her local bartending community by consistently winning cocktail competitions.

  • Ice
  • 2 ounces coconut water
  • 1 ounce fresh lime juice
  • 3/4 ounce pineapple gum syrup (thickened pineapple-flavored Simple Syrup)
  • 1/4 ounce Orgeat (almond-flavored syrup)
  • 1 mint sprig, smacked, for garnish

How to make this recipe

  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients except the garnish. Shake well and strain into an ice-filled collins glass. Garnish with the mint.
