This low-alcohol spritzer is thought to have originated in Andalucía, but versions of it exist all over Spain. Some people replace the dry, nutty fino sherry with slightly floral manzanilla; others use tonic or soda water and fresh lemon juice instead of Sprite.

1 1/2 ounces fino sherry, preferably Tio Pepe
3 ounces chilled Sprite
How to Make It
Fill a highball glass with ice. Add the sherry and Sprite and stir gently.
