- 2 1/2 ounces lemongrass-infused Roca Patrón Reposado tequila (see Note)
- 1 ounce fresh lemon sweet and sour mix (see Note)
- 1/4 ounce ginger liqueur
- Reposado cloud, for serving (see Note)
How to make this recipe
Fill a cocktail shaker with ice and add lemongrass-infused tequila, lemon sweet and sour mix and ginger liqueur. Shake vigorously and strain into a chilled martini glass. Using a big spoon, gently scoop up the reposado cloud, place on top of drink and serve immediately.
To make lemongrass-infused tequila: Clean and chop 10 stalks of lemongrass into dime-sized pieces only using the bottom half of the stalk. In a separate container, dissolve 1 bottle of Roca Patrón Reposado tequila with 1 cup of sugar and whisk to combine. Transfer lemongrass and tequila mixture to a blender and blend until smooth. Let steep for 10 minutes, then strain through a fine strainer and transfer to a container. To make fresh lemon sweet and sour mix: Combine 2 parts fresh lemon juice with 1 part Patrón Citrónge orange liqueur and 1 part simple syrup. Stir to combine. To make reposado cloud: In a deep, wide container, combine 3 cups Roca Patrón Reposado with 2 cups fresh lemonade and 6 cups water. Gently whisk in 3 tablespoons lecithin and 1 1/2 teaspoons xantham gum. Place an aquarium pump into the mixture and let bubble for a few minutes until a “cloud” starts to develop.
