Mixologist Joaquin Simo named this tiki-style cocktail after his fiancée, Rhea, whom he calls Monkey ("Punky when she's being a smarty-pants," he says). The powerful cardamom flavor is a nod to her love of Indian spices.

  1. 3 cardamom pods
  2. Ice
  3. 1 ounce aged rum
  4. 1 ounce bourbon, preferably overproof
  5. 1/2 ounce agave nectar
  6. 1/2 ounce pineapple juice
  7. 1/2 ounce fresh lemon juice
  8. Dash of Angostura bitters
  9. Dash of Peychaud’s bitters
  10. 1 cardamom shoot, for garnish (optional)
  1. In a cocktail shaker, lightly muddle the cardamom pods. Add ice and all of the remaining ingredients except the cardamom shoot and shake well. Strain into a chilled coupe and garnish.
