John Coltharp has tried making ginger-and-rye drinks with scores of different amari (herbal, bittersweet Italian liqueurs). This version, which uses citrusy Averna amaro, is one of his favorites: "It's great with buttery desserts or stinky cheese."

  1. Ice
  2. 2 ounces rye whiskey, preferably Russell's Reserve
  3. 1/2 ounce Averna amaro
  4. 3/4 ounce fresh lime juice
  5. 1/2 ounce Simple Ginger Syrup
  6. 1 ounce chilled club soda
  7. 1 lime wedge, for garnish
  1. Fill a cocktail shaker with ice. Add all of the remaining ingredients except the club soda and garnish; shake well. Strain into an ice-filled collins glass, stir in the club soda and garnish with the lime wedge.
