The original Presbyterian was probably a mocktail, suitable for abstemious churchgoers, that combined ginger ale and club soda to look like a highball (minus the whiskey). Zeppelin owners Jason Kosmas and Dushan Zaric spice up the recipe with a savory house-made ginger beer.
- 12 ounces rye whiskey
- 6 ounces Ginger-Mint Syrup
- 4 1/2 ounces fresh lime juice
- 18 thin lime wheels
- Ice
- 12 ounces chilled club soda
- 6 mint sprigs
- In a pitcher, combine the rye, Ginger-Mint Syrup and lime juice; refrigerate until chilled, at least 1 hour. Press 3 lime wheels on the inside of each of 6 collins glasses and fill with ice. Stir the club soda into the pitcher, then pour into the prepared glasses. Garnish with the mint.
