Greeks make souvlaki by marinating chunks of meat (usually pork or lamb) in oil, lemon juice and oregano, then skewering and grilling them. Grace Parisi opts for pork shoulder because it’s so tender and succulent. Instead of threading the meat onto skewers, she simply cooks it (with onions) in a grill pan until it’s nicely charred, then serves it with store-bought pita and a garlicky cucumber-yogurt sauce called tzatziki.

Pork Souvlaki with Tzatziki

This is one of our favorite dishes. I made it on the grill this week and it came out wonderfully... a different flavor then cooking on a grill pan in the house, but equally as good. I serve it with store bough tzatziki (Cedars), greek salad, stuffed into a whole wheat pita.

Quick, easy and very tasty. My whole family thought it was great, including my 6 and 9 year olds. The 6 year old wanted to make sure there was enough left over for him to have some tomorrow for lunch. (He had to fight with his Dad over that one, who was also supposed to have left-overs for lunch at work!) We made the tzatziki from the recipe and it was also delicious. Our only addition was to add some chopped tomato as an additional accompaniment.
