Pork Medallions with Prosciutto, Arugula and Tomatoes

I served these several times since the recipe first appeared in 1986.  I've always had rave reviews. The prosciutto turns into the yummiest bacon you've ever had.  I served this with regular mashed potatoes, but the recipe recommends the Parmesan Mashed Potatoes with Rosemary which sound really good together.
