I love this recipe. I made it twice changing a couple of things the second time. Here are the changes: Double the pork, substitute yams for russets, drain the tomatoes and rather than shred the pork, cook the stew for 15 minutes with the lid off to reduce the stock. It's even better!

This recipe gets 3 stars from me. It's a tasty stew packed with nutrients, and I really enjoyed making it. But for so many ingredients, the taste was -- for me -- sort of a one-trick pony, so to speak. The overwhelming flavor is cumin (which is delicious -- don't get me wrong). I was expecting more layered flavors, given all the ingredients.
What you'll get with this recipe: a health-conscious meal and a reliable, filling stew that you'll likely make again
What you won't get with this recipe: something that does flavor explosions on your palette.

This recipe was a winner and a great way to experiment with an ingredient I had never tried before (tomatillos)! I did increase the amount of cumin by a teaspoon and added in some extra chili powder, but other than that, I followed the recipe as written. We served it with lots of crusty bread to clean our bowls-- there wasn't a drop left!

add less stock to make it less soupy. also keep your chunks of meat whole if possible.

Much like a tortilla soup recipe, but with pork instead of chicken, plus the addition of the tomatillos and potatoes. Very good!

This was a good one I will definitely make again. I added a can of green tomatillo salsa to make it extra spicy. Very tasty with tortilla chips and sour cream.

I really enjoyed this stew but living in Texas, I'd like a little more Tex-Mex flavor & spice. Next time, I'll substitute the potatoes with some crisp corn and add mushrooms with the celery & onion. Also, I would replace the Anaheim & hot sauce with 1/2 or so jalepeno for kick. The base was really good and a nice alternative to Chicken Tortilla, which is everywhere here. Thanks!

The picture of the stew in the magazine was what tempted me to make this - it looked like pure comfort food! We are vegetarians, so we adapted the recipe by substituting Quorn brand "chik'n tenders" in place of the pork. This stew was delicious! Just really clean, bright flavors - it has easily earned a place on our repertoire. I might even serve it with some rice on those really cold fall evenings...

great comfort food without all the calories. make sure to use the pork tenderloin if your goal is to keep the fat content to a minimum. i will eat this everyday for lunch until it is gone!

I substituted pork butt for the loin cut on the recommendation of my butcher. This increased the cooking time, but I think that's more than made up for in the flavor.
Don't pass on the tortilla chips. They do wonderful things to the texture and taste.
