Pomme en Croute

At Arnaud’s French 75 Bar (just four blocks from the bar where Santini worked), Chris Hannah makes this apple-accented riff on the Brandy Crusta using Calvados instead of the classic’s Cognac.

  1. 1 orange wedge
  2. Sugar
  3. 1 long strip of orange zest, for garnish
  4. Ice
  5. 1 1/2 ounce Calvados
  6. 1/2 ounce orange curaçao
  7. 1/2 ounce Gran Classico amaro or Campari
  8. 1/2 ounce fresh lemon juice
  1. Moisten half of a rocks glass rim with the wedge; coat with sugar. Add the zest. Fill a shaker with ice. Add the remaining ingredients; shake well. Strain into the glass.
