At Arnaud’s French 75 Bar (just four blocks from the bar where Santini worked), Chris Hannah makes this apple-accented riff on the Brandy Crusta using Calvados instead of the classic’s Cognac.

  • 1 orange wedge
  • Sugar
  • 1 long strip of orange zest, for garnish
  • Ice
  • 1 1/2 ounce Calvados
  • 1/2 ounce orange curaçao
  • 1/2 ounce Gran Classico amaro or Campari
  • 1/2 ounce fresh lemon juice

How to make this recipe

  1. Moisten half of a rocks glass <a href="http://www.foodandwine.com/articles/cocktail-basics-techniques#rimmingag... title="Cocktail Techniques: rimming a glass">rim</a> with the wedge; coat with sugar. Add the zest. Fill a shaker with ice. Add the remaining ingredients; shake well. Strain into the glass.
