Pomelo-Mint Mojito

  • SERVINGS: makes 1 drink

This refreshing take on the classic mojito is made with pomelo, an Asian citrus fruit that resembles a thick-skinned grapefruit.

  1. 1 lime wedge
  2. Club soda
  3. 2 tablespoons orange juice concentrate or orange sorbet
  4. Ice
  5. 6 mint leaves
  6. 4 peeled sections of pomelo or grapefruit, chopped
  7. 1 1/2 ounces white rum
  1. In a cocktail shaker, muddle the pomelo with the mint and orange juice concentrate. Add the rum and ice and shake well. Pour into a highball glass. Top with club soda and garnish with the lime wedge.
