Polenta with Chives

Ingredients

  1. 4 cups water

  2. 1 cup instant polenta

  3. 2 tablespoons unsalted butter

  4. Salt and freshly ground pepper

  5. 2 tablespoons snipped chives

  1. In a saucepan, bring the water to a boil. Gradually whisk in the polenta; return to a boil. Cook over moderately low heat, stirring, until smooth, about 3 minutes. Remove from the heat. Whisk in the butter, season with salt and pepper, stir in the chives and serve.
