Plum Puree

Use this plum puree for the Mirabelle cocktail.

  1. 3 plums, quartered and pitted
  2. 3 ounces fresh lemon juice
  3. 1/2 cup sugar
  4. 8 ounces water
  1. In a small saucepan, bring water to a boil with the sugar and lemon juice. Add the plums and simmer over moderate heat until the plums begin to fall apart, about 30 minutes. Let cool, then puree in a blender and strain into a bowl. Refrigerate, covered, for up to 3 days.
