- 3 plums, quartered and pitted
- 3 ounces fresh lemon juice
- 1/2 cup sugar
- 8 ounces water
- In a small saucepan, bring water to a boil with the sugar and lemon juice. Add the plums and simmer over moderate heat until the plums begin to fall apart, about 30 minutes. Let cool, then puree in a blender and strain into a bowl. Refrigerate, covered, for up to 3 days.
