Pineapple Rum and Rum-Soaked Pineapple
- SERVINGS: Makes about 18 ounces
- •MAKE-AHEAD
- 1 1/2 cups demerara sugar
- 1/4 cup finely diced fresh pineapple
- 18 ounces aged rhum agricole
- In a jar, combine the sugar, pineapple and rhum agricole. Stir to dissolve as much of the sugar as possible. Cover and refrigerate overnight. Strain into an airtight container, reserving some of the pineapple for the drink. Refrigerate for up to 1 week.
