Pine Nut-Almond Macaroons
These are classic southern Italian cookies—chewy almond macaroons covered with pine nuts. In this case, they are not cloyingly sweet. They evoke a Mediterranean Easter and, being flourless, are an ideal Passover cookie.
If you can, buy Mediterranean, or Italian, pine nuts (pignoli). They have a more delicate flavor—and a higher price tag—than the Chinese pine nuts.
