Cocktail guru Tony Abou-Ganim revived this forgotten recipe, a version of a Pimm's Cup topped with Champagne.

  1. 2 thin slices strawberry
  2. 2 thin slices apple
  3. 2 thin slices cucumber
  4. Ice
  5. 1 mint sprig
  6. 1 ounce Simple Syrup
  7. 2 ounces chilled Champagne
  8. 2 ounces fresh lemon juice
  9. 1 1/2 ounces Pimm's No. 1 Cup
  1. Fill a cocktail shaker with ice. Add the Pimm's, lemon juice and Simple Syrup and shake well. Strain into an ice-filled white wine glass and top with the Champagne. Garnish with the cucumber, apple and strawberry slices and the mint sprig.
