Cocktail guru Tony Abou-Ganim revived this forgotten recipe, a version of a Pimm's Cup topped with Champagne.

- 2 thin slices strawberry
- 2 thin slices apple
- 2 thin slices cucumber
- Ice
- 1 mint sprig
- 1 ounce Simple Syrup
- 2 ounces chilled Champagne
- 2 ounces fresh lemon juice
- 1 1/2 ounces Pimm's No. 1 Cup
- Fill a cocktail shaker with ice. Add the Pimm's, lemon juice and Simple Syrup and shake well. Strain into an ice-filled white wine glass and top with the Champagne. Garnish with the cucumber, apple and strawberry slices and the mint sprig.
