Pierogi Choucroute

This pierogi choucroute dish straddles national lines, its origins equally Polish and Alsatian. As good Polish wine is hard to come by, pour a richly spicy Alsace Gewürztraminer; both the firm 2004 Kreydenweiss Kritt and the rose-scented 2004 Hugel are great choices with hearty food like this.
