Pickled Red Onions

Ingredients

    1. 1 medium red onion, very thinly sliced
    2. 1/2 cup fresh lime juice
    3. 1/4 habanero chile with seeds, minced
    4. Kosher salt

Directions

  1. In a jar with a tight-fitting lid, combine the onion, lime juice, habanero and a pinch of salt. Cover and shake gently. Refrigerate overnight, gently shaking the jar occasionally. Drain and season with salt.

Make Ahead

The onions can be refrigerated for up to 3 days.

Serve With

Plantain and Goat Cheese Gorditas.
