Père Roux refers to Father Roux, a New Orleans priest and cook who is one of chef John Besh’s friends. Besh fashioned this recipe after one that Père Roux bakes for himself every year on his birthday, with layers of white cake and a buttery banana filling with plenty of rum, all topped with a cream cheese frosting.

Père Roux’s Cake

I made this cake at christmas and it was AWESOME, no issues with the filling or anything and everyone loved it.  My sister and I don't really like cake much and she asked for this for her baby shower...which is today!  So I'm making it again.  thanks for another great keeper

The cake is delicious and the idea wonderful.  The problem was that the filling did not set when cooked per the directions.  This resulted in layers sliding all around and filling oozing from all sides. We had to scrape the filling out, add cornstarch, and cook more. I'm not sure if cooking the filling longer the first time would correct this.
