Jeff Berry named this winter punch after explorer-priest Père Labat, who chronicled the Caribbean diet in the late 1600s and early 1700s. Labat identified clove, cinnamon and nutmeg as ingredients in a rum punch from Barbados.

2 ounces amber rum, preferably Barbados
1 ounce Bajan Spice Syrup
1 ounce fresh lime juice
1/4 ounce chilled club soda
How to Make It
Fill a cocktail shaker with ice. Add the rum, Bajan Spice Syrup and lime juice and shake well. Pour (don't strain) the drink into a chilled rocks glass and stir in the club soda.
