- 4 slices whole wheat ciabatta or country bread, sliced 1/2 inch thick
- 2 tablespoons extra-virgin olive oil
- 1/4 cup freshly grated Parmigiano-Reggiano cheese
- Freshly ground pepper
- Preheat the broiler and position a rack about 6 inches from the heat. Brush the bread on both sides with the olive oil and set the slices on a baking sheet. Toast under the broiler until lightly browned, about 1 minute per side. Sprinkle the toasts with grated cheese and season with pepper. Broil for about 30 seconds, until the cheese is bubbly. Cut the toasts on the bias and serve.
