Owners Mark Pascal and Francis Schott, or "the Restaurant Guys" as they're known on their daily radio show, named their restaurant after Mark's grandmother Catherine Lombardi.

1/2 ounce fresh lemon juice
1/2 ounce fresh lime juice
3/4 ounce Simple Syrup
1 ounce Pisco (South American grape-based spirit)
2 ounces Aperol or Campari
1 large egg white
4 drops of Angostura Bitters
How to Make It
In a cocktail shaker, combine all of the ingredients except the ice and bitters. Shake vigorously for 30 seconds. Add ice, then shake again. Strain into a chilled martini glass. Drop 4 dots of bitters onto the surface of the drink in the pattern of a square and swirl gently with a straw or toothpick to make a design in the foamy head.
