Oven-Dried Tomatoes in Herbed Oil

  • SERVINGS: MAKES ABOUT 1 CUP

  • VEGETARIAN
  1. 1/2 cup extra-virgin olive oil
  2. Oven-Dried Tomatoes
  3. 1 rosemary sprig
  4. 1 thyme sprig
  5. 1 small garlic clove, halved
  6. 1 basil sprig
  1. In a medium saucepan, warm the olive oil over low heat. Add the Oven-Dried Tomatoes, rosemary, thyme and garlic and cook over very low heat for 30 minutes. Transfer the mixture to a large heatproof bowl and let cool completely, then add the basil. Store in a sealed jar, refrigerated, for up to 1 day
