Orange-and-Ale Vinaigrette

Orange-and-Ale Vinaigrette

  • SERVINGS: Makes 1/2 cup
  • FAST

Sean Paxton, founder of, cooks multicourse dinners with beer. This vinaigrette, which he makes with an India Pale Ale, shows beer's lighter side.

  1. 3 ounces Indian Pale Ale
  2. 1 tablespoon minced shallot
  3. 1 teaspoon finely grated orange zest
  4. 1 tablespoon honey
  5. 1 teaspoon Dijon mustard
  6. 4 tablespoons extra-virgin olive oil
  7. Kosher salt and freshly ground pepper
  1. In a small bowl, whisk the beer with the shallot, orange zest, honey and mustard. Gradually add the oil in a thin stream, whisking constantly. Season the vinaigrette with salt and pepper and serve.
Make Ahead The vinaigrette can be refrigerated for up to 5 days. Serve With Chicory, radicchio, arugula, pecans and orange segments.
