Erick Castro muddles plenty of mint leaves with simple syrup, shakes the drink, then pours it through two strainers to remove any particles. The result is a perfectly silky cocktail.

  1. 8 mint leaves
  2. 3/4 ounce Simple Syrup
  3. 2 ounces London dry gin
  4. 1 ounce fresh lime juice
  5. Dash of celery bitters
  6. Pinch of sea salt
  7. Ice
  1. In a cocktail shaker, muddle 7 of the mint leaves with the Simple Syrup, then add the gin, lime juice, bitters and salt. Fill the shaker with ice and shake well. Fine strain into a chilled coupe and garnish with the remaining mint leaf.
