You can use this spice rub on any cut of lamb (or on steak). The crusty chops are sensational set off against the cool relish. Serve with green beans or spinach. Substitution: Cultivated mint can replace the wild.

1993 Paolo Scavino Barbera d'Alba Affinato in Carati. With huge red fruit, licorice and rose petal nuances, acidity and a sweet oak background, this wine is a natural for the sweet-spicy nature of this dish.
