These burgers get their kick from roasted green chiles—both as rajas (roasted chile strips) that are spooned on the burgers and in the salsa verde topping. The chiles of choice are the long, slender, mild green New Mexico variety, also known as Anaheim; for a bit more heat, substitute poblanos.
