Chef and owner Will Goldfarb named this Champagne cocktail for the piney fresh scent it gets from the mix of lemon and herbal liqueur.

  1. Ice
  2. 1 ounce rye
  3. 1/2 ounce green Chartreuse
  4. 3/4 ounce fresh lemon juice
  5. 2 ounces chilled Blanc de Noirs Champagne
  1. Fill a cocktail shaker with ice. Add the rye, Chartreuse and lemon juice; shake well. Strain into a chilled coupe. Stir in the Champagne.
