Mojo Royale

  • SERVINGS: Makes 1 Drink

Ryan Maybee loves tarragon’s licorice flavor, so he decided to use the herb in place of the mint in a Mojito. Then he swapped out the rum for cachaça (to get more kick) and added sparkling wine to keep the drink refreshing. He opts for brut cava in his Mojo Royale.

  1. 8 tarragon leaves, plus 1 tarragon sprig for garnish
  2. 1/2 ounce chilled club soda
  3. Ice
  4. 1 1/2 ounces cachaça
  5. 3/4 ounce fresh lime juice
  6. 3/4 ounce Simple Syrup
  7. 2 ounces chilled dry sparkling wine
  8. 4 dashes of Angostura bitters
  1. In a shaker, muddle the tarragon leaves and soda. Add ice, the cachaça, lime juice and syrup; shake. Fine-strain into a wineglass. Add the wine, bitters and sprig.
