French milk jam is cheap and easy to make—simply cook down whole milk with sugar and vanilla until it forms a caramel-like sauce. Pastry chef Michelle Myers at Boule in Los Angeles combines milk jam and whipped cream to fill her light, delicate éclairs. Grace's homemade version costs very little; plus you'll end up with extra milk jam for spreading on pound cake or spooning over ice cream.
