Melty Feta and Roasted Red Pepper Sandwiches

Tia Keenan’s unconventional, Greek-accented sandwich has just four ingredients, among them feta cheese and dill.

- 8 large slices of focaccia ( 1/2 inch thick)
- 1/2 cup ajvar (red pepper relish) or other roasted red pepper relish
- 1/2 pound creamy feta, such as French, very coarsely crumbled (2 cups)
- 1/4 cup chopped dill
- Preheat the oven to 500°. Arrange the focaccia on a large baking sheet and spread each slice with 1 tablespoon of the ajvar. Scatter the feta on top. Bake in the upper third of the oven for about 7 minutes, until the focaccia is crisp and the cheese is soft. Sprinkle the dill over the cheese and close the sandwiches. Cut in half and serve.
